Vouni Panayia Winery Ltd is the leader in the endeavour for the production of high quality wines
in Cyprus. The new endeavour is supported by certain basic rules which concern the choice of the appropriate varieties, in
wine making, process - stabilisation and bottling.
Some of the basic rules are the following:
- Variety.
- District of grape production (soil, climate, elevation).
- The winery must be located in the area of the grape production.
- Selection of vineyards.
- Good quality grapes.
- Observation of the progress of maturing picking.
- Method of transportation of grapes from vineyards to winery.
- The crushing of grapes must be carried out immediately after picking.
- The fermentation vessels must be made of stainless steel.
- Seperation of the grapes from the clusters.
- Low temperature during fermentation.
- Avoidance of airing as much as possible, particularly where white wine is concerned.
